I Make Great Quesdillas

I have been perfecting my quesadillas for about six months now. We take quesadillas very seriously in this house. I made this for Jordan a week ago and he said it was the best quesadilla he ever had. Yes. So, as you can probably tell, I like recipes that don't have really specific measurements. You can put as much or as little of the ingredients as you want. 

1. Warm some cooking oil in a skillet. 
2. Add the first tortilla. 
3. Add all the ingredients (I would suggest putting the cheese first and sprinkling a little pepper) and finish by placing the second tortilla on top. 
4. Flip when it is properly grilled.

  6. Great recipe! I'm always on the lookout for quick and easy, and this definitely fits the bill. Since i've been trying to go more vegetarian lately, I think I'll try substituting black beans for the chicken, but I bet it will still be amazing!
