I guess it's kind of repetitive to call something a "veggie salad" but that's what I call this. It is super easy and super delicious. I didn't put any measurements for the ingredients because it's really up to you. You can add as little or as much as you want. If I were making this for only me, I would have added avocado. But Jordan doesn't like avocado. Bummer. The only suggestion I have is to let it chill in the fridge for a little while so all the veggie juices can soak together. It makes it a lot more flavorful.
